This 30 Minute Greek Quinoa Salad is loaded with tons of vegetables and tossed with lemon and olive oil! This Mediterranean style recipe makes a great light lunch or healthy dinner!
2. Meanwhile add the rest of the ingredients to a medium bowl. Toss in cooked quinoa. Serve immediately with a sprinkle of feta cheese or refrigerate until ready to serve.
3. Grill chicken over medium-high heat or in a large heavy-duty skillet on the stovetop for 5-6 minutes per side or until the inside is cooked through and the outside is charred. Top with fresh avocado salsa and serve immediately.
