Chicken Pesto Whole Wheat Pasta (RECIPE)
Ingredients
- 1.5 lbs. boneless skinless chicken breast (cut into 1-inch chunks)
- 10 oz. cherry tomatoes sliced in half
- 2 tablespoons extra virgin olive oil (use Kasandrinos)
- 8 oz. whole wheat pasta (penne or any choice)
- 1/8 teaspoon ground black pepper
- 1 x spear Broccoli, cooked, boiled, drained, without salt
Basil pesto
- 2 cups fresh basil
- 4 tablespoons walnuts
- ½ cup Parmesan cheese Parmigiano-Reggiano or Grana Padano, freshly grated
- ½ cup extra virgin olive oil
- 1 teaspoon lemon juice
- Himalayan salt to taste
Instructions
- 1. Cut the chicken and tomato in slices
- 2. Boil the pasta according to the packaging
- 3. Grill the chicken slices in some olive oil.
- 4. While grilling the slices, boil the broccoli for 3 minutes
- 5. Add the sliced veggies to the chicken and stir-fry for a minute. Add seasoning and the pesto to the chicken/veggie mix.
- 6. After the pasta is done, put back into the pot and add the pesto/chicken/veggie and mix well.
- 7. Serve.
