Chicken Pesto Whole Wheat Pasta (RECIPE)

Ingredients


  • 1.5 lbs. boneless skinless chicken breast (cut into 1-inch chunks)
  • 10 oz. cherry tomatoes sliced in half
  • 2 tablespoons extra virgin olive oil (use Kasandrinos)
  • 8 oz. whole wheat pasta (penne or any choice)
  • 1/8 teaspoon ground black pepper
  • 1 x spear Broccoli, cooked, boiled, drained, without salt

Basil pesto

  • 2 cups fresh basil
  • 4 tablespoons walnuts
  • ½ cup Parmesan cheese Parmigiano-Reggiano or Grana Padano, freshly grated
  • ½ cup extra virgin olive oil
  • 1 teaspoon lemon juice
  • Himalayan salt to taste


Instructions

  • 1. Cut the chicken and tomato in slices 
  • 2. Boil the pasta according to the packaging

  • 3. Grill the chicken slices in some olive oil.
  • 4. While grilling the slices, boil the broccoli for 3 minutes
  • 5. Add the sliced veggies to the chicken and stir-fry for a minute. Add seasoning and the pesto to the chicken/veggie mix.
  • 6. After the pasta is done, put back into the pot and add the pesto/chicken/veggie and mix well.
  • 7. Serve.
