Air Fryer Veggies (RECIPE)

Air fried vegetables take about half the time as oven veggies and I find they caramelize better. Little effort with lots of flavor.

Air Fryer Veggies (RECIPE)

Ingredients


  • 1 red bell pepper chopped
  • 1 cup halved mushrooms
  • 1 tablespoons extra virgin olive oil (use Kasandrinos)
  • 1 small zucchini cut into ½" moons
  • 2 cloves garlic minced
  • ½ teaspoon Italian seasoning
  • 1 teaspoon onion powder
  • salt and black pepper to taste
  • 1 tablespoon shredded Parmesan cheese (optional)


Instructions

  • 1. Wash the vegetables, deseed the bell peppers and chop the rest of the veggies into equal sizes.


  • 2. Transfer to a large mixing bowl, then sprinkle the powders, dry thyme,, salt and pepper, olive oil mix to combine.


  • 3. Preheat the air fryer at 400F for 3 minutes..


  • 4. Transfer the vegetables to the air fryer basket and spread them out. Cook for 10 to 15 minutes shaking the air fryer basket every 4 to 5 minutes until tender, crunchy and perfectly roasted.
