Air Fryer Vegetables & Potatoes (RECIPE)

Air Fryer Vegetables & Potatoes (RECIPE)
Ingredients
- 3 medium – big potatoes (about 3 cups, peeled and cut in 1-inch sizes)
- 2 medium – large Carrots
- 2 tablespoons extra virgin olive oil (use Kasandrinos)
- 1 small head of broccoli (or about 2 cups)
- 2 Bell peppers I used a combination of red and yellow bell pepper
- 1 medium red onion
- 1 teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon dry thyme
- ½ teaspoon salt
- ¼ teaspoon black Pepper.
Instructions
- 1. Wash the vegetables, deseed the bell peppers and chop the rest of the veggies into equal sizes.
- 2. Transfer to a large mixing bowl, then sprinkle the powders, dry thyme, , salt and pepper, olive oil mix to combine.
- 3. Preheat the air fryer at 400F for 3 minutes..
- 4. Transfer the vegetables to the air fryer basket and spread them out. Cook for 10 to 15 minutes shaking the air fryer basket every 4 to 5 minutes until tender, crunchy and perfectly roasted.
